Our journeys round the globe have taught us many things, however, one lesson is obvious: Breakfast in 1 country produces a superb dinner in a different.
In Beirut, chickpeas, yogurt, pita and tahini create a crispy, velvety salad that is great any time of the day. This dish is referred to as fatteh from the Levant, in which as breakfast it’s meant to turn the former day’s stale pita bread into a hearty meal.

1/4 cup tahini
1 tsp grated lemon zest, and 1 tbsp lemon juice
2 8-inch pita breads, every split into two rounds
5 tbsp salted butter, melted, divided

2 151/2-oz cans chickpeas, rinsed and drained
11/2 tsp za’atar, and more to function (optional)
Heat the oven to 400°F using a stand in the center place. In a small bowlwhisk together the yogurt, tahini, garlic, lemon zest and juice, 1/2 tsp salt and 1/4 tsp black pepper. Put aside.
Arrange the pita onto a rimmed baking sheet. Simmer for 5 minutes, then reverse every round and continue to bake until browned and crisp, 5 to 6 minutes. Transfer to a wire rack and let cool; book the baking sheet.
While the pita cools, disperse the pine nuts onto the allowed baking sheet and toast until golden brown, 3 to 5 minutes, stirring once about halfway through. Immediately move to a small bowl and toss with the remaining 3 tbsp butter, staying 1/2 teaspoon cumin, cayenne (if using) and 1/4 tsp each salt and black pepper. Put aside.
In a moderate microwave-safe bowl, then throw the chickpeas using the za’atar (if using), 1 tsp salt and 1 teaspoon water. Meanwhile, break the pita into manageable portions and set in a broad, shallow serving bowl or divide among 4 individual bowls.
With a slotted spoon, arrange the heated chickpeas within the pita. Spoon on the yogurt mix, top with spoon and mint on the walnut nut-butter mix. Sprinkle with added za’atar (if using).
